The Blushing CoEd

Ingredients

  • 1 oz. Gin
  • 1 oz. Applejack
  • 2 Tsp. Sugar
  • 4 Raspberries + 2 Raspberries for Garnish
  • 1 Egg White (Optional)

MIXING METHOD:

  • In a mixing glass, muddle the sugar and raspberries together allowing the sugar to dissolve.
  • In a mixing tin , add the gin , applejack, and egg white.
  • Cap off with the mixing glass containing the raspberries and sugar blend.
  • Dry shake (without ice) for at least 10 seconds, (note: the longer you dry shake, the more foam will be created with the egg yolk). If you decide not to not use the egg white, disregard the dry shake.
  • Uncap the mixing glass from the tin, then add ice to the mixture.
  • Cap and shake again for another ten seconds.
  • Strain into a chilled cocktail glass.
  • Garnish with two fresh raspberries.
